Ingredients:

  • ¾ cup water (warm)
  • ¾ cup milk (warm)
  • 3 tbsp oil (vegetable or sunflower)
  • ¾ oz fresh yeast (about 2¼ tsp active dry yeast)
  • 1 tbsp sugar
  • 1 tbsp salt
  • 6 ⅓ cups all-purpose flour

For Boiling:

  • 8 ½ cups water
  • 6 tbsp baking soda
  • 1 tbsp salt

For Topping:

  • Flax seeds
  • Sesame seeds
  • Coarse sea salt

Instructions:

  1. Activate the Yeast:
    Warm the water and milk to about 100°F (lukewarm). Stir in the sugar and yeast. Let it sit 10 minutes until frothy.
  2. Make the Dough:
    In a large bowl, combine flour and salt. Add the yeast mixture and oil. Knead for 8-10 minutes until smooth and elastic. Cover and let rise about 1 hour or until doubled.
  3. Shape the Pastries:
    Punch down dough, divide into equal portions, and shape into traditional pretzel shapes or rolls.
  4. Prepare the Boiling Water:
    Bring 8 ½ cups water to boil. Add baking soda and salt.
  5. Boil the Pastries:
    Boil each piece 30 seconds per side. Remove with slotted spoon and place on a parchment-lined baking sheet.
  6. Add Toppings:
    Brush with water or egg wash and sprinkle with flax seeds, sesame seeds, and sea salt.
  7. Bake:
    Preheat oven to 425°F. Bake for 15-20 minutes until golden brown.
  8. Serve warm and enjoy!
