Ingredients: For the Cookies:
1 cup almond flour
1 cup rolled oats (gluten-free if necessary)
1/2 cup coconut flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
1/4 teaspoon black pepper (optional, for a slight kick)
1/2 teaspoon salt
1 cup pitted Medjool dates (soaked in warm water for 10 minutes if dry)
1/3 cup coconut oil, melted
1 teaspoon vanilla extract
1/4 cup unsweetened almond milk (or any plant milk)

Shredded coconut

Instructions:
Step 1: Prepare the Dough
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a food processor, combine the soaked Medjool dates, melted coconut oil, vanilla extract, and almond milk. Blend until smooth and creamy, scraping down the sides as needed.
In a large mixing bowl, whisk together the almond flour, rolled oats, coconut flour, baking soda, spices (cinnamon, ginger, cardamom, nutmeg, and black pepper), and salt.
Pour the wet mixture into the dry ingredients and stir until well combined. If the dough feels too dry, add a bit more almond milk; if too wet, add a little more coconut flour.
Step 2: Shape and Bake the Cookies
Using a tablespoon or a cookie scoop, portion out the dough and roll it into balls. Place them on the prepared baking sheet, leaving space in between for spreading.
Gently flatten each ball with your palm, and if desired, sprinkle with chopped nuts, shredded coconut, or chia seeds for added texture.
