Ingredients:
Half a leek
1-2 zucchinis
2 eggs
Spices (optional: curry, a pinch of paprika, celery, parsley)
Whole-grain flour (any type)
Cornmeal
Breadcrumbs
Preparation:
Finely chop the leek and grate one or two zucchinis. Add the eggs, a few tablespoons of flour, breadcrumbs, and spices to taste.
The mixture should be slightly thicker than pancake batter.
Scoop with a spoon and fry in oil until golden.
