Whether you’re prepping for a light summer lunch or impressing dinner guests, this make-ahead recipe delivers big flavor without the fuss.

Ingredients:

  • 5 whole mackerel (about 2.2 lbs)
  • 1 lemon
  • 3.5 oz all-purpose flour
  • Salt to taste
  • 1/2 cup olive oil

For the Marinade:

  • 2 medium yellow onions
  • 1 carrot root
  • 1 parsley root
  • 1 small celery root
  • 1 green bell pepper
  • 1 bay leaf
  • 3–4 garlic cloves
  • Salt and pepper to taste
  • 1/2 cup white wine
  • 1/2 cup water
  • 1 bunch fresh parsley

Instructions:
Clean the mackerel thoroughly by removing the innards and gills. Rinse, pat dry, and season with salt and freshly squeezed lemon juice. Dredge the fish in flour and fry in hot olive oil until golden on both sides. Place fried mackerel in a deep dish.

Slice all the vegetables into rounds. In a pot, combine the onions, carrots, parsley root, celery root, bell pepper, bay leaf, garlic, wine, and water. Cover and simmer for about 30 minutes until the vegetables are tender.

Once cooked, stir in the rest of the olive oil and chopped parsley. Pour the hot marinade over the fried fish. Allow it to cool, then refrigerate for at least 1 hour before serving to allow the flavors to fully develop.

This recipe is especially perfect for dry mackerel, as it absorbs the marinade beautifully.
