Grapefruit—tart, sweet, and wonderfully aromatic—is a true gem among citrus fruits. Discovered in the 18th century on the island of Barbados, this fruit isn’t just a trendy diet food. It’s naturally rich in pectin, a soluble fiber known to help lower cholesterol and regulate blood sugar levels.

This vibrant, refreshing salad brings out the best of grapefruit’s complex flavors, balanced with creamy avocado, fresh mint, spicy chili, and a burst of pomegranate. Serve it chilled as a side dish with grilled chicken, seafood, or tortilla chips.

Ingredients:

  • 2 cups peeled and chopped grapefruit (about 14 oz)
  • ½ cup pomegranate seeds
  • 2 ripe avocados, peeled and chopped (about 2 cups)
  • ½ cup finely chopped fresh mint
  • 4 tablespoons freshly squeezed lime juice
  • ½ teaspoon finely chopped fresh chili (adjust to taste)
  • Pinch of salt
  • Pinch of black pepper

Instructions:

  1. In a large bowl, combine the grapefruit, pomegranate seeds, avocado, mint, lime juice, chili, salt, and pepper.
  2. Toss gently to combine, being careful not to mash the avocado.
  3. Chill the salad for at least 15 minutes before serving.
  4. Serve cold as a refreshing side dish or a light starter.
