Yum Soup with Tofu is a delicious and easy-to-make dish that’s packed with flavors and nutrition. This soup combines the smooth texture of tofu with a light, savory broth, making it perfect for those looking for a satisfying yet light meal. Whether you’re a tofu lover or new to it, this soup can quickly become a favorite.

To make a basic Yum Soup with Tofu, you’ll need:

Tofu: Soft or medium-firm tofu works best for this soup. Tofu adds protein and has a gentle flavor that absorbs the broth.
Vegetable Broth: The base of the soup. Vegetable broth provides a warm, comforting flavor.
Mushrooms: Adds earthiness to the soup. Shiitake or button mushrooms are great options.
Garlic and Ginger: These add depth and a bit of spice to the broth.
Soy Sauce: For a salty, umami flavor.
Lime Juice: Adds brightness and a bit of tanginess to the soup.
Vegetables: Carrots, baby spinach, or bok choy work well, adding color and nutrients.
Fresh Herbs: Cilantro or green onions are perfect for a fresh garnish.
Optional Heat: Add a few slices of fresh chili or a pinch of chili flakes if you like a bit of spice.
How to Make Yum Soup with Tofu
Prepare the Tofu: Start by draining the tofu and cutting it into small cubes. If you want a firmer texture, you can pan-fry the tofu cubes in a little oil until they’re golden on the outside. This step is optional but adds a nice texture.

In a pot, add a little oil and sauté the garlic and ginger until they’re fragrant. This step only takes about a minute but adds a lot of flavor to the soup.

Pour in the vegetable broth, and add the soy sauce. Bring this to a gentle simmer. Then, add your choice of mushrooms and other vegetables. Let everything cook until the vegetables are tender, about 5-7 minutes.

Carefully add the tofu cubes to the soup. Allow them to warm up in the broth for a few minutes. Add the lime juice just before serving to keep its fresh taste.

Ladle the soup into bowls and garnish with fresh herbs like cilantro or green onions. For a bit of spice, add a few slices of fresh chili or a sprinkle of chili flakes.
