Snowball Cake

- ¾ cup mandarin juice (or fresh orange juice)
- 2 tbsp sugar
- ½ envelope gelatin (~1 tsp)

Instructions:
- Prepare the sponge by whisking eggs with sugar until fluffy. Gradually fold in flour and pudding powder. Pour into a greased 9-inch round pan.

Filling:
- 4 eggs
- 3 tbsp milk
- 1 cup sugar
- 7 oz ground almonds
- 2 tbsp butter
- 2 tsp vanilla sugar
- ½ cup apricot jam
Instructions:
- Bake sponge as usual, spread jam and cream mixture over cooled sponge. Chill 2 hours.
- Cover with white glaze and decorate with coconut flakes.
