Ingredients
Custard Layer
- 2 cups whole milk
- 3 tablespoons semolina
- 2 tablespoons granulated sugar
Banana-Nut Filling
- 2 medium ripe bananas
- 3 tablespoons finely ground walnuts
- 2 tablespoons honey
- 3/4 cup finely ground biscuits or similar cookies
Biscuit Layer
- 7 oz (about 20) tea biscuits or some style cookies
- 1/4 cup unsalted butter, softened
- 3/4 cup milk, warmed for dipping
Decoration
- 1 banana, sliced into thin rounds
Instructions
- In a small saucepan, heat 2 cups of milk over medium heat until almost boiling. Gradually whisk in semolina and sugar. Cook for 2–3 minutes until thickened. Let it cool completely.
- In a mixing bowl, mash 2 bananas. Stir in ground walnuts, honey, and ground biscuits. Mix until fully combined.
- Fold the cooled semolina custard into the banana mixture. Add softened butter and beat until creamy and fluffy.
- Warm the remaining 3/4 cup milk. Quickly dip half of the biscuits in the milk and arrange them in a single layer on a serving plate or tray. Let cool slightly.
- Spread half of the banana-custard mixture over the biscuit layer. Arrange thin banana slices on top.
- Dip the remaining biscuits in milk and place over the banana layer. Spread the remaining custard evenly on top.
- Decorate the top with banana slices. Chill for at least 1 hour to allow the flavors to meld before slicing into 12–16 pieces.

For extra elegance, lightly dust the top with cinnamon or cocoa powder. A few finely chopped pistachios or a drizzle of honey can add a subtle crunch and shine.
