Plum Jam Cake is a delightful blend of sweet, nutty, and buttery flavors. Soft, almond-enriched dough forms a golden crust that perfectly cradles a layer of rich plum jam, finished with a charming lattice top. Ingredients:
- 1 ½ cups plum jam (about 15 oz / 450 g)
- 4 eggs
- 1 2/3 cups all-purpose flour (about 7 oz / 200 g)
- 11 tablespoons butter, softened (about 6 oz / 160 g)
- ½ cup sugar (about 4 oz / 120 g)
- Pinch of salt
- 1 ½ cups chopped almonds (about 5 oz / 150 g)
Instructions:
Finely chop the almonds and set aside.
Hard boil the eggs, allow them to cool, then press the yolks through a fine sieve.
In a bowl, mix the pressed yolks with flour, almonds, a pinch of salt, sugar, and softened butter. Knead quickly to form a smooth dough.
Wrap the dough and refrigerate for 1 hour.
On a floured surface, roll out the dough and line a low 9-inch (or 10-inch) cake pan. Prick the bottom with a fork.
Spread the plum jam evenly over the dough.
Roll out the remaining dough and cut into strips. Arrange them in a lattice pattern over the jam.
Preheat oven to 400°F (200°C) and bake for 30 minutes until golden.
Let cool before serving.
