Whether you’re cooking for a weekend lunch or a light dinner, these recipes are simple to prepare and full of flavor—just right for the warmer months ahead.
ZUCCHINI MUFFINS
- 1 cup finely grated young green zucchini (about 9 oz)
- 3.5 oz shredded cheese (Gouda, Emmental, etc.)
- 3 tablespoons oil
- ⅖ cup milk
- 3.5 oz cottage cheese (with herbs if desired)
- 2 eggs
- 7 oz all-purpose flour
- 1 teaspoon baking powder
- Chopped parsley
Let zucchini sit in a colander for 15 minutes and squeeze out excess liquid. Mix all ingredients quickly.
Fill muffin molds ⅔ full.
Bake at 350°F.
POTATO ROLL WITH MUSHROOMS
- 1.1 lb potatoes
- 1 egg yolk
- 3 pats of butter
- All-purpose flour (as needed)
- Salt, pepper
- 1 small red onion, finely chopped
- 1 small garlic clove, minced
- 10.5 oz mushrooms, thinly sliced
- ⅘ cup heavy cream
- Ground coriander
Boil potatoes with skin on, peel, and mash while hot. Add egg yolk, butter, seasonings, and enough flour to make a dough.
Roll into a narrow rectangle.
Sauté onion, add mushrooms, cook until liquid evaporates. Stir in cream and seasonings, simmer until thick.
Spread filling over dough, roll up.
Place in baking dish, pour over cream, and bake.
OYSTER MUSHROOM RAGU WITH CHEESE DUMPLINGS
For the ragu:
- 1.1 lb oyster mushrooms, thinly sliced
- 1 onion, chopped
- 1 small garlic clove, minced
- 1¼ cups heavy cream
- Salt, pepper, ground coriander
- Chopped parsley
- A bit of lemon juice
Sauté onion, add mushrooms, cook until liquid evaporates. Add remaining ingredients (lemon juice last) and simmer until slightly thickened.
For the dumplings:
- 2 pats of butter
- 3 tablespoons semolina
- 1 tablespoon flour
- 3.5 oz cottage cheese
- 2 egg yolks
- Salt
Melt butter. Mix all ingredients. Add a splash of milk if needed. Let rest for 30 minutes. Adjust consistency with flour or water.
Cook dumplings in salted water.
SPINACH TARTLETS
- 1 package frozen spinach
- 1 tablespoon flour
- 1 small garlic clove, minced
- Salt
- 3 pats of butter
- 1 cup heavy cream
Thaw and drain spinach.
Melt butter, whisk in flour and cream, then add spinach and garlic. Simmer. If too thin, add breadcrumbs.
Also needed:
- Puff pastry
Roll out pastry, cut into small pieces, and press into tart or muffin molds.
Fill ⅔ full with spinach mix, top with grated cheese and seeds (sunflower, pumpkin, sesame).
Bake until golden.
CREAMY LEEK RISOTTO
- 1 cup rice
- 1 large leek, sliced
- ¾ cup heavy cream
- Butter
- Salt
- 1 tablespoon grated Parmesan
Sauté leeks gently in butter until soft but not browned.
Add rice and ⅔ of required water. Simmer until absorbed, then stir in cream and cook until rice is tender.
Stir in Parmesan before serving.
