This healthy vegetable soup combines fresh greens, celery root, peas, potatoes, peppers, and kohlrabi for a flavorful, comforting meal. Perfect for any season, it’s easy to prepare and packed with natural nutrients.
Ingredients:
- 1 large bunch of greens
- 1 large celery root
- ½ bunch of celery leaves
- 1 onion
- 2 tablespoons oil
- 100 g fresh peas
- 2 medium potatoes
- 2 green sweet peppers
- 2 small kohlrabi
- Salt and pepper to taste
Preparation:
Peel, wash, and dice the greens, celery root, kohlrabi, and potatoes. Wash, core, and dice the peppers. Peel and dice the onion, then sauté it in hot oil. Add the vegetables and sauté until softened, stirring often and adding a little water if needed. Peel and dice the potatoes finely. Pour water into the sautéed vegetables, add peas, and cook for about 20 minutes. Then add the diced potatoes and cook for another 20 minutes. Season the soup to taste near the end of cooking. Finally, add the celery leaves.
