There’s a certain comfort in a pot that simmers slowly — the kind that fills a kitchen with warmth and memory. These two rustic soups, bring that feeling to the table with simple ingredients and deep, satisfying flavor.

Creamy Chicken & Okra Soup (Old-World Style)

Ingredients

  • 10.5 oz (about 2 cups) chicken, diced
  • 2 tbsp onion, finely chopped
  • 3 tbsp carrot, diced
  • 3 tbsp celery, diced
  • 2 tbsp all-purpose flour
  • 2 tbsp oil or butter
  • 1.7 oz (about 1/2 cup) okra
  • 1 tbsp vinegar or juice of 1/2 lemon
  • 3/4 cup sour cream
  • 1 tbsp fresh parsley, chopped
  • Salt, black pepper, and paprika to taste
  • 4 cups water

Instructions

  1. Heat oil or butter in a pot and sauté the chopped onion until lightly golden.
  2. Add diced chicken and cook until lightly browned.
  3. Stir in carrots and celery; cook for a few minutes.
  4. Add flour and cook briefly, stirring constantly.
  5. Season with salt, pepper, and paprika. Mix well.
  6. Pour in water and let the soup simmer.
  7. In a separate pot, cook okra with water and vinegar (or lemon juice) for a few minutes. Drain and add to the soup.
  8. Simmer until everything is tender.
  9. Stir in sour cream just before serving and sprinkle with parsley.

Wild Mushroom Soup

Ingredients

  • 7 oz porcini mushrooms (or similar), finely chopped
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp garlic, minced
  • 1 egg
  • 2 tbsp all-purpose flour
  • 2 tbsp oil
  • Salt and black pepper to taste
  • 4 cups water

Instructions

  1. Chop mushrooms finely, salt them, and let sit for 15 minutes.
  2. In a pot, sauté garlic and parsley in oil until fragrant.
  3. Add drained mushrooms and cook for about 10 minutes.
  4. Pour in water and bring to a simmer.
  5. In a separate bowl, whisk egg with flour until smooth.
  6. Slowly stir the mixture into the soup.
  7. Simmer until the soup thickens slightly and develops a rich color.
  8. Serve hot.
