If you’re looking for simple, comforting potato dishes that don’t require much effort, these two recipes are perfect. One is a creamy baked potato side dish, while the other is a hearty skillet meal with bacon and mushrooms—both packed with flavor and made with everyday ingredients.

Creamy Baked Potatoes

Ingredients

  • 2 pounds potatoes, peeled
  • 2 tablespoons butter
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup heavy cream

Instructions

Slice the potatoes into rounds about ½ inch thick. Melt the butter in a baking dish and spread it evenly across the bottom. In a large bowl, season the potato slices with salt and black pepper, then arrange them in the baking dish.

Bake at 400°F for about 45 minutes, or until the potatoes are golden brown. Pour the heavy cream over the potatoes, using just enough to lightly coat them without covering them completely. Return the dish to the oven and bake for another 15 minutes, allowing the cream to absorb into the potatoes. Serve warm.

Potato Skillet with Bacon and Mushrooms

Ingredients

  • 2 pounds potatoes
  • 6 ounces bacon, diced
  • 8 ounces button mushrooms, quartered
  • 1 small onion, diced
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley
  • Salt, to taste
  • Black pepper, to taste

Instructions

Cook the potatoes in salted water with the skins on until just tender. They should still be firm enough to cut into cubes. Let them cool slightly, then peel if desired and cut into bite-sized cubes.

Heat the butter in a large skillet and cook the potatoes until they are golden brown. Transfer them to a warm plate.

In the same skillet, cook the onion and bacon until the bacon is crisp. If there’s too much grease, carefully drain some of it. Add the mushrooms, potatoes, and parsley to the skillet. Cover and cook, stirring occasionally, until the mushrooms are tender. Season with black pepper and only a little salt, since the bacon is already salty. Serve immediately.
