Ingredients
6–8 lbs turkey, cut into pieces
4.5 lbs fresh tomatoes
4.5 lbs red onions
8 cups turkey or chicken broth
1 teaspoon cayenne pepper or hot paprika
2–3 tablespoons all-purpose flour
2 tablespoons cooking oil or turkey fat
1–2 teaspoons salt (to taste)
Instructions
Cut the turkey into pieces. Slice the onions thinly and sauté in oil or turkey fat until translucent. Blanch the tomatoes, peel, and slice them, then add to the onions. Add the turkey pieces and cayenne or hot paprika, stir well, and cook for about 15 minutes. Sprinkle the turkey with flour and mix thoroughly. After a few minutes, pour in the broth. Simmer on medium heat until the turkey is fully cooked and tender, about 1–1.5 hours depending on the size of the pieces. Adjust seasoning with salt as needed.
