Whether you’re hosting a festive dinner or looking to surprise loved ones with a homemade gift, these three irresistible cakes will be the star of your holiday spread. From the nutty layers of Old Bridge Cake to the tangy layers of Winter Lambada, and the rich, indulgent Triple Delight, these cakes are perfect for any occasion. Each one brings something special to the table, from creamy fillings to irresistible glazes, ensuring that your holiday celebrations are sweet, memorable, and filled with joy.

Old Bridge Cake

For the Biscuit:

  • 8 egg yolks
  • 1 packet of vanilla sugar
  • 8 tbsp sugar
  • Mix well, then add:
  • 8 tbsp ground hazelnuts
  • 4 tbsp flour
  • 8 egg whites, whipped

For the Cream:

  • 2 cups milk
  • 1 packet vanilla pudding
  • 8 tbsp sugar
  • 2 tbsp flour
  • 1 packet vanilla sugar
  • After cooling, add 1 stick margarine (or butter).
  • 6-7 bananas, halved and arranged over the cream

For the Chocolate Glaze:

  • Melted chocolate to cover the cake

Instructions:

  1. Preheat the oven to 350°F.
  2. Bake the biscuit in a large sheet pan.
  3. Prepare the cream mixture with milk, vanilla pudding, sugar, and flour. Once thickened, cool and add margarine.
  4. After the biscuit has cooled, layer with the banana halves and pour the cooled cream over it.
  5. Coat the top with chocolate glaze and refrigerate for at least 4 hours before serving.

Winter Lambada Cake

For the Biscuit:

  • 6 egg whites, whipped
  • 6 egg yolks
  • 1/2 cup coconut sugar (for a caramel-like flavor)
  • 1 cup almond flour
  • 1 tsp baking powder

For the Orange and Spice Syrup Filling (Filling 1):

  • 1 cup fresh orange juice
  • 1/2 cup water
  • 2 tbsp honey (for sweetness)
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1 packet vanilla pudding (for thickening)

For the Cookie Layer (Filling 2):

  • Use cinnamon-spiced shortbread cookies or gingerbread cookies for a wintery twist.
  • Arrange the cookies over the warm syrup.

For the Cream (Filling 3):

  • 2 cups heavy cream
  • 4 tbsp cornstarch (for thickening)
  • 3/4 cup powdered sugar
  • 1 stick unsalted butter, softened
  • 1/2 cup white chocolate chips (melted)

For the Dark Chocolate Glaze (Filling 4):

  • 4 oz dark chocolate (at least 70% cocoa)
  • 2 tbsp coconut oil (to give it a smooth, shiny finish)

Instructions:

  1. Preheat your oven to 350°F (175°C). Whip the egg whites and set them aside. In a separate bowl, mix the egg yolks with coconut sugar, almond flour, and baking powder. Gently fold in the whipped egg whites. Pour the batter into a large rectangular pan and bake for about 25-30 minutes, or until golden brown.
  2. In a saucepan, combine the orange juice, water, honey, cinnamon, and ginger. Heat over medium heat, stirring occasionally. Add the vanilla pudding powder to thicken the syrup. Once it reaches a pudding-like consistency, pour it over the freshly baked biscuit.
  3. Layer cinnamon-spiced shortbread or gingerbread cookies over the warm syrup, pressing them lightly into the cake.
  4. In a bowl, whip the heavy cream until stiff peaks form. In a separate pan, heat the cornstarch with the powdered sugar and 1 cup of water. Once thickened, remove from heat and add the butter and melted white chocolate. Fold the cream mixture into this until smooth.
  5. After the cake has cooled, pour the white chocolate cream layer over the top. For added texture, you can sprinkle crushed nuts like pecans or walnuts on top of the cream.
  6. Melt the dark chocolate with coconut oil over a double boiler or microwave. Once smooth, drizzle the glaze over the entire cake. Let the glaze set and refrigerate for a few hours before serving.

Triple Delight Cake

For the Biscuit:

  • 6 egg whites
  • 1 cup sugar
  • 3 tbsp flour
  • 2 tbsp breadcrumbs
  • 1 tsp baking powder
  • 1 cup ground walnuts or hazelnuts

For the Cream:

  • 6 egg yolks
  • 3 packets vanilla pudding
  • 1 cup sugar
  • 4 cups milk
  • 1 stick margarine
  • 5-10 oz chocolate for cooking (melted)

Instructions:

  1. Preheat the oven to 320°F (160°C). Whip the egg whites and add sugar. In a separate bowl, mix the dry ingredients and fold them into the whipped egg whites.
  2. Bake the biscuit in a rectangular pan until golden brown (approximately 30 minutes).
  3. For the cream: Mix the egg yolks with sugar and pudding powder. Cook with milk until thickened. Cool and add margarine. Divide the cream in half, adding melted chocolate to one portion.
  4. After the biscuit cools, soak it lightly with milk. Spread the chocolate cream over it, followed by a layer of cookies dipped in milk.
  5. Top with the vanilla cream and grated chocolate for the final layer.
