Ingredients:

  • 16 oz puff pastry (about 1 sheet)
  • 5 egg yolks
  • 1 tablespoon milk
  • 2 tablespoons granulated sugar
  • 6 sheets of gelatin
  • 1/2 cup granulated sugar
  • 2 packets vanilla sugar (or 2 teaspoons vanilla extract)
  • 1/2 cup amaretto liqueur
  • 9 oz mascarpone cheese
  • 1 cup thick yogurt (like sour cream or Greek yogurt)
  • 1 1/4 cups heavy cream
  • 3 tablespoons strong cold coffee
  • 2 oz bitter cookies (like maroni or almond cookies)
  • 1 tablespoon powdered sugar for dusting

Directions:

  1. Preheat oven to 375°F. Roll out the softened puff pastry on a floured surface. Cut out 5 circles (about 11 inches in diameter). Cut 2 of the circles into star shapes (these will be used for decoration at the end).
  2. Mix 1 egg yolk with milk and brush each pastry round with the mixture. Sprinkle granulated sugar on top and bake each layer for about 15 minutes (on a baking sheet lightly moistened with cold water) until golden.
  3. Dissolve the gelatin. Whisk 4 egg yolks with sugar, vanilla sugar (or vanilla extract), and 1/3 cup of amaretto over a double boiler. Add the mascarpone and yogurt. Stir in the dissolved gelatin. Place the mixture in the fridge for 20 minutes. Whip the heavy cream until stiff and fold it into the cream mixture.
  4. Mix coffee and 3 tablespoons of amaretto. Soak the cookies in the coffee mixture. Spread the cream evenly on each puff pastry layer. Stack the layers one on top of the other, finishing with the star-shaped pieces on top. Garnish with soaked cookies.
  5. Dust the Tiramisu Star with powdered sugar and serve immediately.
