Stuffed Bell Peppers
Ingredients:
- 4 large bell peppers
- 1 onion
- 1 carrot
- 1 lb ground meat
- 1 cup rice
- Salt and pepper
- Oil
- Tomato sauce
Preparation:
Wash and clean the peppers. Sauté the chopped onion and carrot, then add the ground meat and rice. Season with salt and pepper. Fill the peppers with the prepared mixture and arrange them in a baking dish. Pour over the tomato sauce and bake until the peppers are tender and nicely roasted.
Breaded Stuffed Peppers
Ingredients:
- 8 large roasted bell peppers
- 7 oz smoked ham of your choice
- 7 oz cheese curds or fresh cheese
- Salt, to taste
For the Breading:
- 2 eggs
- All-purpose flour
- Breadcrumbs
- Oil, for frying
Preparation:
Clean the roasted peppers and carefully remove the stems and seeds, making sure the peppers remain whole. Season with salt to taste and place them in a colander for about 1 hour to drain.
Thinly slice the smoked ham and cheese. Place a piece of cheese and a piece of ham inside each drained pepper. Handle the peppers gently so they do not tear.
Prepare three shallow dishes for breading. Beat the eggs in the first dish, place the flour in the second, and the breadcrumbs in the third. Coat each stuffed pepper first in flour, then in beaten egg, and finally in breadcrumbs.
Pour about ½ inch of oil into a frying pan and heat it. Fry the peppers over medium heat. Once one side is golden brown, carefully turn them and fry the other side.
Transfer the fried peppers to a plate lined with paper towels to absorb excess oil. Serve warm with tomato salad as a side dish.
Potato-Stuffed Peppers
Ingredients:
- 8 bell peppers
- 2.2 lb potatoes
- 2 teaspoons salt
- 2–3 tablespoons lard or cooking fat
- 2–3 tablespoons sour cream
- 2 eggs
Preparation:
Remove the stems and seeds from the peppers.
Grate the potatoes and sauté them in oil. Add the sour cream, eggs, and salt, then stir until the mixture comes together.
Stuff the peppers with the potato mixture and arrange them in a baking dish. If you have any filling left over, pour it over the peppers.
Bake at 400°F for about 1 hour, or until the peppers are tender and nicely roasted.
