You think you’ve tried every pepper recipe out there? Think again. These sweet and tangy honey-pickled peppers are the pantry heroes you didn’t know you needed. With their vibrant colors, bold flavor, and easy prep, they’re the kind of jarred magic that’ll make your charcuterie board, salad, or sandwich sing—no cooking experience required.

Ingredients:

  • 6.5 lbs red, yellow, or green bell peppers (fleshy and firm)
  • 8 1/2 cups vinegar (diluted with water in a 3:1 ratio)
  • 1.1 lbs honey (about 1 2/3 cups)
  • Olive oil (enough to cover tops of jars with a 1-inch layer)

Instructions:

  1. Slice peppers in half, remove seeds, rinse thoroughly, and let drain.
  2. Layer the peppers in sterilized jars, mixing the colors for a vibrant look.
  3. In a large pot, bring the diluted vinegar and honey to a boil.
  4. Pour the hot marinade over the peppers in the jars, ensuring they’re fully submerged.
  5. Allow the mixture to cool completely.
  6. Once cool, pour a 1-inch layer of olive oil on top of each jar.
  7. Seal jars tightly and store in a cool, dark place.

These peppers keep beautifully and are ready to enjoy all winter long.
