Sunset Cake is a bright and refreshing dessert with a creamy yogurt filling and a vibrant, fruity topping. This beautiful layered cake features purees of strawberries, kiwis, apricots, and a hint of fresh mango for extra tropical sweetness, creating a stunning sunset effect on the plate.

Ingredients

Base:

1 fruit cake base, 9-inch round (24 cm)

Filling:

6 sheets gelatin

2 cups full-fat plain yogurt

Zest of 1 untreated lemon

1/4 cup granulated sugar

1 cup heavy cream

Topping:

1 cup strawberries (fresh or frozen, hulled)

2 kiwis, peeled

1 cup canned apricots, drained

1 cup fresh mango, peeled and chopped

2 packets cake gelatin powder (about 2 tablespoons)

3 tablespoons granulated sugar

Filling Preparation:

  1. Soak gelatin sheets in cold water until soft (about 5 minutes).
  2. In a bowl, mix yogurt, sugar, and lemon zest.
  3. Drain gelatin sheets, warm a small amount of the yogurt mixture in a saucepan, then dissolve the gelatin in it.
  4. Stir this gelatin mixture back into the rest of the yogurt.
  5. Whip heavy cream until stiff peaks form, then gently fold it into the yogurt mixture.

Topping Preparation:

Puree strawberries, kiwis, apricots, and mango separately until smooth, adding a tablespoon of water if needed to reach a pourable consistency (each should yield about 1 cup of puree).

Divide each fruit puree into two portions, reserving about 2 tablespoons from each for gelatin mixing.

Heat the remaining puree in small saucepans.

Mix 1 teaspoon of cake gelatin powder with 1 teaspoon sugar and 2 tablespoons reserved puree for each fruit. Stir these mixtures into the heated purees, bring to a gentle boil, then remove from heat and let cool slightly.

Layer

Place the cake base on your serving plate and set a cake ring around it.

Pour the prepared filling over the base, smoothing the top, and refrigerate until firm (at least 1-2 hours).

Once set, carefully layer the fruit purees over the filling, using a fork to swirl them together gently to create a colorful, sunset-like pattern.

Chill the cake for another 2 hours or until the topping is set.

Remove the cake ring before serving and enjoy your fruity dessert!
