A flavorful pork liver stew, seasoned with paprika, garlic, and fresh parsley. Perfect served on its own or alongside mashed potatoes.
Ingredients:
3–4 medium onions, finely chopped
1 bunch fresh parsley, chopped
3–4 cloves garlic, minced
2 tablespoons lard or cooking fat
1–2 teaspoons paprika (adjust to taste)
Salt and black pepper to taste
1 pound pork liver, cleaned and cut into small cubes
1 cup water (plus extra as needed)
2 tablespoons ketchup or tomato juice (optional)
Thickening Sauce:
1 tablespoon lard or butter
1 teaspoon sweet paprika
2 tablespoons all-purpose flour
Instructions:
- In a large skillet or saucepan, heat 2 tablespoons of lard over medium heat. Sauté onions, garlic, and parsley until softened, adding a splash of water if needed to prevent sticking. Season with paprika, salt, and pepper.
- Add cubed pork liver and 1 cup of water. Simmer gently, stirring occasionally, until the liver is cooked through (about 15–20 minutes).
- Stir in ketchup or tomato juice if using, adjusting seasoning as desired.
- For the thickening sauce, melt 1 tablespoon of lard or butter in a small pan, stir in 1 teaspoon paprika and 2 tablespoons flour, and cook for 1–2 minutes. Gradually add this to the stew, stirring to combine.
- Cook a few more minutes until the stew reaches your desired thickness.
- Serve hot, either on its own or with mashed potatoes.
