A bold, sun-kissed blend inspired by Southern Europe — where smoky roasted tomatoes meet briny olives and sardines for a savory bite that tastes like a seaside afternoon. Perfect on warm toasted bread, this spread brings together the vibrant flavors of the Mediterranean in one irresistible jar.

Ingredients (Serves 4)

2 medium tomatoes, halved

4 cloves garlic

½ cup green olives, pitted

3–4 sardines (from a tin)

3 tablespoons capers

2–3 teaspoons tomato paste

A handful of fresh parsley

3 tablespoons olive oil

Black pepper, to taste

A pinch of grated nutmeg

Instructions

Preheat the oven to 425°F (220°C).

Place the halved tomatoes and garlic cloves on a baking sheet. Roast for 20 minutes, until the tomatoes soften and the garlic turns golden.

In a blender, combine the roasted tomatoes and garlic, green olives, sardines, capers, tomato paste, parsley, and olive oil. Blend until smooth and creamy.

Season with freshly ground black pepper and a light touch of nutmeg.

Serve the spread slightly warm or chilled with toasted rustic bread or crackers.
