Ingredients (Makes 12 muffins)
For the muffins:
½ cup unsalted butter, softened
½ cup powdered sugar
2 large eggs
1 cup all-purpose flour
½ teaspoon vanilla extract
2 tablespoons milk
For the glaze:
4 cups powdered sugar
Juice of 3 lemons (about 6 tablespoons)
A few drops of food coloring (optional)
Fresh fruit or sugar decorations for garnish
Instructions
Preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
Make the batter: In a large bowl, beat butter with sugar until light and fluffy. Add eggs one at a time, mixing well. Gradually add flour, alternating with milk, until smooth. Stir in vanilla extract.
Bake: Divide the batter evenly among muffin cups. Bake for about 20 minutes, or until golden and a toothpick inserted comes out clean.
Prepare the glaze: In a medium bowl, whisk together powdered sugar and lemon juice until smooth. For a fun twist, add a few drops of food coloring.
Decorate: Once muffins are cooled, spoon the glaze over the tops. Decorate with fresh fruit or sugar flowers for an elegant finish.
