Spinach and Bacon Salad with Warm Dressing is a flavorful dish that can be served as a main meal or a side. The crispy bacon, tender spinach, and rich, slightly sweet dressing make for an irresistible combination.

Ingredients:

  • 10–14 oz (300–400g) fresh bacon, chopped
  • 1 tablespoon mild mustard
  • 2 tablespoons red wine or balsamic vinegar
  • 3 teaspoons honey
  • Salt, to taste
  • Black pepper, to taste
  • 1 lb (about 500g) fresh baby spinach, washed and dried
  • ½ to 1 medium onion (optional), thinly sliced
  • 3 hard-boiled eggs, chopped
  • 3.5–7 oz (100–200g) cooked pasta

Instructions:

  1. In a skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and place on a paper towel-lined plate.
  2. In the same skillet, whisk together the bacon drippings, mustard, wine or balsamic vinegar, and honey until smooth. Season with salt and pepper.
  3. Cook the pasta according to package instructions, then drain.
  4. In a large bowl, combine the spinach, pasta, and crispy bacon. Drizzle with the warm dressing and toss gently.
  5. Sprinkle the chopped eggs over the top before serving.

For an even warmer salad, gently heat the dressing on the stove before pouring it over the spinach to slightly wilt it.
