When summer rolls around and the heat makes heavy meals unappealing, it’s time to embrace light and refreshing dishes. With minimal cooking and a simple layering technique, it’s an easy way to enjoy a protein dish without turning on the stove.
Ingredients:
- 2 cups (500 ml) plain yogurt
- About ¾ cup (200 ml) mayonnaise
- 4 packets unflavored gelatin
- 6 oz (about 170 g) deli ham (or turkey ham), diced
- 3 hard-boiled eggs, chopped
- 3-4 pickles, diced
- 1 boiled carrot, diced
- Salt, to taste
Instructions:
- Prepare the gelatin according to the package instructions and let it bloom.
- In a saucepan over low heat, warm the yogurt and stir in the mayonnaise until well combined.
- Add the bloomed gelatin and continue stirring until fully dissolved. Do not let the mixture boil. Season with salt.
- Pour a small amount of the mixture into a mold, then layer in some ham, eggs, pickles, and carrots. Continue layering until all ingredients are used, finishing with the yogurt mixture on top.
- Chill in the refrigerator until fully set, about 4-6 hours.
- Once firm, slice and serve cold.
