Sicilian-style fish recipe is simple yet packed with flavor. The fish is marinated with fresh rosemary, lemon, and anchovies, then baked with a splash of white wine. It’s a light, Mediterranean-inspired dish that’s easy to make.

Ingredients:

  • Fish fillets (such as snapper or similar white fish)
  • Fresh rosemary (crushed by hand or in a mortar)

  • Anchovies, thinly sliced
  • 1/2 cup (120ml) white wine (champagne or a good quality dry white wine)

Instructions:

  1. Crush the rosemary and mix it with olive oil in a bowl.
  2. Place the fish fillets in the marinade, making sure they are well coated.
  3. Layer the thin lemon slices over the fish, then add the sliced anchovies on top.
  4. Pour the white wine (or champagne) over the fish.
