Semla is a traditional Swedish pastry that is soft, sweet, and filled with creamy goodness. It is made from a fluffy cardamom-spiced bun, which is cut open and filled with almond paste and whipped cream.
Ingredients for the Dough:
- 250 g margarine
- 150 g sugar
- 4 egg yolks
- 150 g flour
- 1 packet of baking powder
- 200 ml milk
Cream the margarine with the sugar, then add the egg yolks one at a time, mixing continuously. Add the remaining ingredients and pour the dough into a baking pan.
For the Topping:
- 4 egg whites
- 250 g sugar
- 200 g coarsely chopped hazelnuts (or almonds, walnuts)
Beat the egg whites until stiff, gradually adding the sugar to make a meringue. Spread the meringue over the dough and sprinkle with chopped hazelnuts. Bake until golden.
Filling:
- 500 ml heavy cream
After the cookie is baked and cooled, slice it in half horizontally. Whip the cream and fill the cookie, layering it as follows: base – cream – top – meringue topping.
