Base for Meat Dishes (Everyday Savory Foundation)

Ingredients

  • 1–2 medium carrots, diced
  • 1 small root of parsley and celery each (or 2 tbsp diced each)
  • 1 small onion, chopped (amount to taste)
  • 1–2 garlic cloves, minced (add at the end)
  • ½ bell pepper (optional, seasonal), diced
  • 1 small tomato (optional, seasonal), diced
  • Salt, to taste
  • 1–2 tablespoons all-purpose flour
  • ¼ cup water
  • Fresh chopped parsley, for garnish
  • 2–3 tablespoons sour cream (room temperature)
  • Meat of your choice (chicken, beef, pork)

Instructions

  1. In a large pan, heat a little oil and lightly sauté all vegetables except the garlic for just 2–3 minutes.
  2. Season with a little salt and layer your chosen meat directly over the vegetable base.
  3. Avoid stirring—especially with chicken—to prevent breaking it apart. Instead, shake the pan gently to redistribute flavors.
  4. Add garlic last, directly next to or on top of the meat (not into the veggie mix).
  5. When the meat is nearly cooked through, mix the flour with water and stir it into the pan to thicken the sauce.
  6. Let simmer for a few more minutes.
  7. Turn off the heat and gently spoon in sour cream without stirring. Top generously with fresh parsley.
