If you don’t have an idea what to prepare on hot summer days, Rosa’s Light Summer Dish with Zucchini is the perfect choice.
First, sauté the red onion. Grate the zucchini and add it to the onion, season lightly with salt, and cover the pan. Let the zucchini release its juice and cook until the liquid evaporates. Once the zucchini is cooked, mix it with the cooked pasta, then add cream (you can use cooking cream, but I prefer regular cream). Season with pepper and, if desired, add garlic. This dish is very tasty and ready in the time it takes to cook the pasta. It can also be reheated later.
