Light and easy to prepare, this rice soup is a perfect for any time of the year. With carrots, parsley, and parmesan, it offers a warm bowl of goodness.
Ingredients:
- 1 cup rice
- 3 carrots
- Butter (about 2 tbsp)
- Salt, black pepper (to taste)
- ½ bunch parsley
- Parmesan cheese (to taste)
- 4 cups (1 quart) water
Preparation:
- Rinse and cook the rice in water.
- Peel, wash, and finely chop the carrots. Sauté them in butter.
- Add the cooked rice, season with salt and pepper, and pour in 4 cups of water.
- Let it simmer for about 10 minutes.
- Remove from heat, sprinkle with chopped parsley, and add Parmesan cheese to taste.
