Light and easy to prepare, this rice soup is a perfect for any time of the year. With carrots, parsley, and parmesan, it offers a warm bowl of goodness.

Ingredients:

  • 1 cup rice
  • 3 carrots
  • Butter (about 2 tbsp)
  • Salt, black pepper (to taste)
  • ½ bunch parsley
  • Parmesan cheese (to taste)
  • 4 cups (1 quart) water

Preparation:

  1. Rinse and cook the rice in water.
  2. Peel, wash, and finely chop the carrots. Sauté them in butter.
  3. Add the cooked rice, season with salt and pepper, and pour in 4 cups of water.
  4. Let it simmer for about 10 minutes.
  5. Remove from heat, sprinkle with chopped parsley, and add Parmesan cheese to taste.
