Few soups are as comforting and satisfying as a warm bowl of red lentil soup. This dish is made with red lentils, tender vegetables, aromatic spices, and a smooth, velvety texture.
This homemade version combines red lentils with grated potato and sautéed onions, creating a naturally thick and flavorful soup. A little paprika and red pepper flakes add warmth, while a finishing touch of milk and egg yolk gives the soup a delicate creaminess.
Simple, nourishing, and wonderfully satisfying, this traditional-inspired soup is perfect for chilly evenings, family lunches, or whenever you crave something warm and comforting.
Ingredients
- 1 ½ cups dried red lentils
- 8 cups beef broth or water
- 1 medium potato, peeled and finely grated
- 2 medium onions, finely chopped
- 1 tablespoon all-purpose flour
- 3 tablespoons olive oil
- 1 large egg yolk
- 1 cup whole milk
- 1 teaspoon sweet paprika
- ½ teaspoon red pepper flakes
- ½ teaspoon freshly ground black pepper
- Salt, to taste
- 2 tablespoons chopped fresh parsley, for serving
Instructions
1. Prepare the lentils
Rinse the red lentils thoroughly under cold running water until the water becomes mostly clear. Drain well and set aside.
2. Sauté the vegetables
Heat the olive oil in a large soup pot over medium heat. Add the chopped onions and cook for approximately 5 minutes, stirring occasionally, until soft and translucent.
Sprinkle in the flour and stir for about one minute. Add the grated potato and cook for another 2 minutes, allowing the ingredients to combine.
3. Cook the lentils
Add the rinsed red lentils and pour in the beef broth or water. Stir well and bring the mixture to a gentle boil.
Reduce the heat, partially cover the pot, and simmer for approximately 30–40 minutes, stirring occasionally, until the lentils and potato are completely soft.
4. Create a smooth texture
For a traditional smooth consistency, blend the soup using an immersion blender until creamy.
Alternatively, pass the soup through a fine-mesh sieve, pressing the mixture gently with a spoon. This produces a particularly silky texture.
5. Season the soup
Return the soup to low heat. Add the paprika, red pepper flakes, black pepper, and salt to taste.
Simmer gently for another 5–10 minutes, stirring occasionally. If the soup is thicker than you prefer, add a little warm water or broth.
6. Prepare the creamy finishing mixture
In a small bowl, whisk together the egg yolk and milk until smooth.
Slowly add a ladleful of hot soup to the egg mixture, whisking constantly to temper the yolk and prevent it from curdling.
Remove the soup from the heat and gradually stir in the tempered mixture.
Warm gently if necessary, but do not allow the soup to boil after adding the egg and milk.
7. Serve
Ladle the soup into warm bowls and garnish with freshly chopped parsley. For extra flavor, add a little paprika and a drizzle of olive oil.
Serve immediately with warm flatbread or crusty bread.
Serving Suggestions
Turkish red lentil soup pairs beautifully with warm pita bread, fresh lemon wedges, or a simple cucumber and tomato salad. A squeeze of fresh lemon just before eating brings out the natural sweetness of the lentils and balances the creamy texture.
KitchenMagic3 Tip
Red lentils naturally break down as they cook, making them perfect for thick, creamy soups. If you prefer a lighter consistency, simply add extra broth toward the end of cooking. For a little more heat, increase the red pepper flakes.
