When the summer heat kicks in, there’s nothing quite like a homemade sorbet to keep things fresh and light. This red currant sorbet is intensely flavorful, beautifully colored, and surprisingly easy to make. Whether you have an ice cream maker or not, this recipe gives you a smooth, scoopable sorbet that tastes like sunshine and fruit orchards in every bite.

Red Currant Sorbet
Prep time: 25 minutes | Serves 4–5

Ingredients

  • ⅔ cup water
  • ⅔ cup granulated sugar
  • Juice of 1 orange
  • 1 cup red currant juice or pulp (strained)

Remove the red currants from their stems and blend them in a food processor until smooth. Strain the puree using a fine mesh sieve or cheesecloth to remove seeds and skins. Set aside.

To make the syrup, combine water, sugar, and (optional) lime zest in a small saucepan. Bring to a boil, then simmer for about 4–5 minutes. Remove from heat and allow to cool completely.

In a mixing bowl, combine the red currant juice with the orange juice. Stir in the cooled syrup gradually—start with most of it, and adjust to taste depending on your preferred level of sweetness and tartness.

Pour the mixture into an ice cream machine and churn according to the manufacturer’s instructions. If you don’t have one, place the mixture in a shallow freezer-safe container. Freeze and stir every 1–2 hours to break up ice crystals until fully frozen.

For an extra-smooth texture, blend the semi-frozen sorbet in a food processor and return it to the freezer until firm. This step helps eliminate larger ice crystals and gives a soft, creamy consistency.
