11 lbs red peppers
2 heads garlic
2 cups oil
1 cup salt
1/2 cup sugar
1 teaspoon peppercorns
1 bunch parsley
Preparation:
Wash the peppers, remove the seeds, and cut them into thick strips. Arrange the strips of peppers in the bottom of a large bowl. Sprinkle with salt and sugar, then drizzle with a little oil and vinegar. Add peppercorns as you layer, repeating the process until all the ingredients are used.
