Recipe for Homemade Dumplings-
From the moment you decide to make these dumplings until they’re served on your plates, it takes about fifteen minutes. There’s no boiling water or anything like that involved!
- Take one and a half yesterday’s rolls and cut them into cubes in a bowl.
- Add 1.5 liters of all-purpose flour, 2 egg yolks, about half a teaspoon of salt, and half a teaspoon of baking powder. Cover this mixture with 1.5 liters of cold milk.
- Next, beat 2 egg whites until stiff and gently fold them into the mixture above.
- Choose a mold to give the dumplings their shape. A tart pan (preferably made of glass, silicone, or ceramic—NOT metal!) works well. Grease it with butter and dust it with flour.
- Transfer the dough into the mold and microwave it. If you have a 750W microwave, cook for exactly 8 minutes. After the microwave stops, wait about 1-2 minutes for the dough to settle, then poke it with a toothpick and invert it onto a plate. Cut into pieces with a sharp knife (a serrated knife works great).
- If you use eggs from free-range chickens, the dumplings will have a lovely yellow color (as is the case for me). If you use store-bought eggs, the dumplings will be lighter, but that doesn’t take away from their flavor.

Semolina and Cheese Dumplings
Ingredients:
- 500 g fresh cow cheese
- 200 g semolina
- 100 g all-purpose flour
- 100 g butter
- 1 egg
- 2 egg yolks
- A pinch of salt
Preparation:
- Combine all the ingredients in a bowl.
- Form the mixture into small balls.
- Cook the dumplings in boiling water for about 20 minutes.
And that’s it! They are neither too hard nor mushy. Enjoy!
