This quick bread is very simple, quick to make, and a bit different from yeast bread. It’s best when it’s still warm.

I combined rye and spelt flour, so the bread is a bit “moist,” but with white wheat flour, it turns out more crumbly.

Ingredients:

  • 2 cups flour (1 cup rye, 1 cup spelt)
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup milk

Instructions:

  1. Preheat the oven to 400°F.
  2. Mix the flour, baking soda, and salt.
  3. Add the milk and stir until the mixture comes together, but don’t over-mix.
  4. Dust the work surface with flour, turn out the dough (which will be quite runny), shape it into a ball, and gently flatten it.
  5. Coat it well in white flour, then transfer it to a greased baking sheet. Use a sharp knife to make a deep cross on top.
  6. Place in the preheated oven and bake for 20-30 minutes.
