Ingredients

  • 17 sheets of phyllo dough (or pie crusts)
  • 1 cup prunes, pitted
  • 1/2 cup chopped walnuts
  • 1/2 cup ground walnuts
  • 1/2 cup brown sugar
  • 1 packet vanilla sugar (or 1 teaspoon vanilla extract)
  • 1/4 cup oil
  • 1/4 cup sparkling water
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon honey
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lay down four sheets of phyllo dough, brushing each with a mixture of oil and sparkling water.
  3. On the top sheet, evenly distribute a quarter of the prunes (whole or quartered).
  4. Sprinkle with a mixture of vanilla sugar, brown sugar, ground walnuts, and cinnamon.
  5. Drizzle a little honey over the filling.
  6. Add a quarter of the chopped walnuts over the sugar and nuts.
  7. Roll the layered phyllo into a log and place it on a baking tray lined with parchment paper.
  8. Repeat the process with the remaining sheets and filling until you have four rolls.
  9. Lightly brush the tops with the oil and sparkling water mixture.
  10. Bake for about 20 minutes or until golden brown.
  11. Cover the baked rolls with a clean cloth to cool slightly. For an extra indulgence, sprinkle with powdered sugar and cinnamon before serving.
