Ingredients

  • 1 lb ground meat (your choice)
  • 1 slice of bread, soaked in milk
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dry spices (paprika, oregano, or your preference)
  • 1 tablespoon mustard
  • 1/4 cup chopped fresh parsley
  • 1 lb young carrots
  • 1 tablespoon oil
  • Extra mustard for serving

Instructions

  1. Preheat the oven to 340°F (170°C).
  2. Cube the bread slice and soak it in milk until softened.
  3. In a large bowl, combine the ground meat, soaked bread, onion, 1 clove of minced garlic, egg, salt, pepper, dry spices, mustard, and parsley. Mix thoroughly until well combined.
  4. Cover the mixture and let it rest in the fridge for about 30 minutes.
  5. Once chilled, mix again and shape it into a loaf. Place the loaf on a baking dish lined with parchment paper.
  6. Bake for approximately 1 hour or until fully cooked through.
  7. While the meat roll is baking, boil the carrots in water until tender but not overcooked. Drain and cut into rings.
  8. Toss the carrots with oil, mustard, the remaining minced garlic, salt, pepper, and parsley.
  9. Serve the meat roll sliced alongside the seasoned carrots for a delightful, balanced meal.
