Potato Pie is a satisfying dish made with basic pantry ingredients. This version is simple, budget-friendly, and perfect for a light meal, appetizer, or snack. Baked in homemade phyllo and flavored with onions, herbs, and olive oil, it’s a comforting option that’s easy to prepare.

Potato Pie Ingredients:

2.2 lbs potatoes (about 6 medium), grated

3 large onions, chopped

Salt, to taste

Black pepper, to taste

Fresh parsley, chopped (about 2 tablespoons)

3–4 tablespoons olive oil

Homemade or store-bought phyllo dough (at least 6 sheets)

About 1/2 cup water for finishing

1–2 tablespoons olive oil for finishing

Preparation:

  1. In a skillet, heat 2–3 tablespoons of olive oil and sauté the chopped onions until soft.
  2. Add grated potatoes, salt, pepper, and cook over low heat for 10 minutes. Stir occasionally.
  3. Add chopped parsley at the end and remove from heat.
  4. Preheat oven to 350°F (180°C).
  5. Layer two phyllo sheets in a lightly greased pan, brushing with a little oil. Add another sheet and spread the potato mixture over it. Roll or fold as desired.
  6. Repeat to make 2–3 rolled pies and arrange in the baking dish.
  7. Bake for 30 minutes. Meanwhile, boil 1/2 cup water with 1–2 tablespoons of oil.
  8. Pour over the hot pie and return to the oven for 10 more minutes.
  9. Let it rest slightly before serving.
