This classic potato dough is soft, versatile, and easy to prepare. You can use it for gnocchi, dumplings, or traditional noodle-style shapes. With just a few basic ingredients, it comes together quickly and makes the perfect base for many comforting dishes.

Ingredients

2.2 lb potatoes (starchy potatoes work best)

1 ¾ cups all-purpose flour

2 egg yolks

1 whole egg

Salt, to taste

Instructions

  1. Cook the potatoes until tender. Peel them while still hot and transfer to a clean work surface.
  2. Mash the potatoes well or grate them using the fine side of a grater.
  3. Add the flour and salt, then gently knead just until a soft dough forms. It should not stick to your hands.
  4. Divide the dough into several pieces and roll each piece into long ropes.
  5. Cut the ropes into small pieces, about ¾ inch wide.
  6. Separate them immediately to prevent sticking.
  7. Shape each piece by gently pressing it with a fork to create grooves, which help hold sauces better.
