Ingredients
2.2 lb potatoes (starchy potatoes work best)
1 ¾ cups all-purpose flour
2 egg yolks
1 whole egg
Salt, to taste
Instructions
- Cook the potatoes until tender. Peel them while still hot and transfer to a clean work surface.
- Mash the potatoes well or grate them using the fine side of a grater.
- Add the flour and salt, then gently knead just until a soft dough forms. It should not stick to your hands.
- Divide the dough into several pieces and roll each piece into long ropes.
- Cut the ropes into small pieces, about ¾ inch wide.
- Separate them immediately to prevent sticking.
- Shape each piece by gently pressing it with a fork to create grooves, which help hold sauces better.
