Do you have a favorite pizza topping or style? Whether it’s a classic Margherita, or a unique creation like pesto pizza, there’s always something special about the combination of a crispy crust, flavorful toppings, and melted cheese.

Ingredients (Serves 2)

  • 1 ½ cups fresh spinach leaves, packed
  • ½ cup fresh basil leaves, packed (about 1 bunch)
  • 1 ½ tablespoons olive oil or oil from sun-dried tomatoes
  • 1 large garlic clove
  • 12-inch pizza dough (store-bought or homemade)
  • 1/3 cup sun-dried tomatoes, sliced and drained
  • 2 cups shredded mozzarella cheese (8 oz)
  • 1 cup freshly grated Parmesan cheese
  • Extra olive oil for greasing

Instructions:

  1. Preheat oven to 500°F. Lightly grease a 12-inch pizza pan with olive oil.
  2. In a food processor, blend the spinach, basil, olive oil, and garlic until a coarse paste forms. Transfer to a small bowl and set aside.
  3. Roll out the pizza dough onto the pan. Spread the green pesto evenly over the dough.
  4. Scatter the sun-dried tomatoes over the pesto. Sprinkle the mozzarella and Parmesan evenly on top.
  5. Bake for 10–15 minutes, or until the crust is golden and cheese is melted and bubbly. Serve immediately.
