Do you have a favorite pizza topping or style? Whether it’s a classic Margherita, or a unique creation like pesto pizza, there’s always something special about the combination of a crispy crust, flavorful toppings, and melted cheese.
Ingredients (Serves 2)
- 1 ½ cups fresh spinach leaves, packed
- ½ cup fresh basil leaves, packed (about 1 bunch)
- 1 ½ tablespoons olive oil or oil from sun-dried tomatoes
- 1 large garlic clove
- 12-inch pizza dough (store-bought or homemade)
- 1/3 cup sun-dried tomatoes, sliced and drained
- 2 cups shredded mozzarella cheese (8 oz)
- 1 cup freshly grated Parmesan cheese
- Extra olive oil for greasing
Instructions:
- Preheat oven to 500°F. Lightly grease a 12-inch pizza pan with olive oil.
- In a food processor, blend the spinach, basil, olive oil, and garlic until a coarse paste forms. Transfer to a small bowl and set aside.
- Roll out the pizza dough onto the pan. Spread the green pesto evenly over the dough.
- Scatter the sun-dried tomatoes over the pesto. Sprinkle the mozzarella and Parmesan evenly on top.
- Bake for 10–15 minutes, or until the crust is golden and cheese is melted and bubbly. Serve immediately.
