This dish is perfect when you want to prepare something simple, quick, and delicious. With just a few basic ingredients like mushrooms, peppers, onions, cheese, and pasta, you can create a hearty meal that everyone will love.
Ingredients:
- 200 g mushrooms
- 1 red bell pepper
- 1 onion
- 2 spring onions
- 400 g pasta
- 200 g cheese
- 1 deciliter tomato juice
- 100 g hard cheese (such as cheddar or gouda)
Preparation:
- Slice the mushrooms, cut the bell pepper into strips, and chop the spring onions. Cook the pasta in salted water until al dente.
- While the pasta is cooking, finely chop the onion and sauté it briefly in a pan. Add the mushrooms, bell pepper, and spring onions. Lightly salt and sauté for 6–7 minutes.
- Drain the cooked pasta and mix it with the sautéed vegetables, cheese, tomato juice, and half of the grated hard cheese.
- Transfer the mixture to a baking dish, top with the remaining cheese, and bake at 220°C (428°F) for about 15 minutes.
