- 14 oz (400g) pasta
- 7 oz (200g) smoked cheese, shredded
- 1 large eggplant, diced
- 1 tablespoon all-purpose flour
- Salt and pepper to taste
For the Sauce:
- 3 tablespoons olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 28 oz (800g) canned crushed tomatoes
- ¼ cup dry white wine
- 2 teaspoons sugar
- 1 tablespoon dried Italian seasoning

- Cook the Pasta:
Bring a large pot of salted water to a boil and cook the pasta according to the package directions. Once cooked, drain and set aside. - Prepare the Sauce:
