Looking for a light, delicious, and healthy alternative to traditional patties? These oven-baked zucchini patties are crispy on the outside, soft on the inside, and packed with flavor. Ingredients:

  • 2 medium zucchinis
  • 1/2 cup cornmeal
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried dill or fresh parsley, chopped
  • 1/2 teaspoon garlic powder (optional)

Instructions:

  1. Wash and grate the zucchinis using a coarse grater. Sprinkle them with salt and let sit for about 15 minutes to release excess moisture.
  2. Squeeze out as much liquid as possible, then transfer the zucchini to a mixing bowl.
  3. Add the cornmeal, eggs, black pepper, dill or parsley, and garlic powder if using. Mix well until the batter is thick; you can adjust the amount of cornmeal if needed.
  4. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  5. Scoop the mixture using a spoon and place small patties onto the baking sheet.
  6. Bake for about 20 minutes, then flip them over and bake for another few minutes until golden brown.
  7. Serve warm with dips, yogurt, or sour cream.
