Ingredients:
- 2 medium zucchinis
- 1/2 cup cornmeal
- 2 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried dill or fresh parsley, chopped
- 1/2 teaspoon garlic powder (optional)
Instructions:
- Wash and grate the zucchinis using a coarse grater. Sprinkle them with salt and let sit for about 15 minutes to release excess moisture.
- Squeeze out as much liquid as possible, then transfer the zucchini to a mixing bowl.
- Add the cornmeal, eggs, black pepper, dill or parsley, and garlic powder if using. Mix well until the batter is thick; you can adjust the amount of cornmeal if needed.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Scoop the mixture using a spoon and place small patties onto the baking sheet.
- Bake for about 20 minutes, then flip them over and bake for another few minutes until golden brown.
