Ingredients:

  • 3 large eggs
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh chives or basil
  • 1 tablespoon olive oil or unsalted butter
  • 2 ounces goat cheese, crumbled
  • 1 tablespoon milk or cream (optional, for fluffier eggs)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. In a bowl, whisk the eggs with milk (if using), parsley, chives, salt, and pepper.
