These no-bake Coconut Bars are chewy, chocolaty, and incredibly easy to make—perfect for holidays or coffee breaks.

Ingredients:

  • 1/2 cup water
  • 1 1/2 cups granulated sugar
  • 1 stick (1/2 cup) margarine or unsalted butter
  • 2 1/2 cups crushed dry tea biscuits (or graham crackers)
  • 1 cup shredded coconut
  • 1 tablespoon rum (optional)

For the chocolate glaze:

  • Your favorite chocolate glaze (melted dark or milk chocolate with a bit of oil or cream)

Instructions:

  1. In a saucepan, bring the sugar and water to a gentle boil. Stir until the sugar dissolves completely.
  2. Remove from heat and add margarine (or butter). Stir until melted and smooth.
  3. Mix in the crushed biscuits, shredded coconut, and rum if using. Combine well.
  4. Press the mixture into a greased or parchment-lined loaf pan or shallow square dish.
  5. Let it cool completely, then pour the chocolate glaze over the top.
  6. Once the glaze sets, cut into sticks or bars and serve.
