These no-bake Coconut Bars are chewy, chocolaty, and incredibly easy to make—perfect for holidays or coffee breaks.
Ingredients:
- 1/2 cup water
- 1 1/2 cups granulated sugar
- 1 stick (1/2 cup) margarine or unsalted butter
- 2 1/2 cups crushed dry tea biscuits (or graham crackers)
- 1 cup shredded coconut
- 1 tablespoon rum (optional)
For the chocolate glaze:
Instructions:
- In a saucepan, bring the sugar and water to a gentle boil. Stir until the sugar dissolves completely.
- Remove from heat and add margarine (or butter). Stir until melted and smooth.
- Mix in the crushed biscuits, shredded coconut, and rum if using. Combine well.
- Press the mixture into a greased or parchment-lined loaf pan or shallow square dish.
- Let it cool completely, then pour the chocolate glaze over the top.
- Once the glaze sets, cut into sticks or bars and serve.
