Festive Lamb Roast

  • 300 ml dry white wine
  • 1/2 chili pepper
  • 1 tsp mustard
  • 1 sprig rosemary
  • Olive oil
  • Salt and pepper

Preparation:
Place the lamb in a deep dish. In a separate bowl, mix the milk with salt and pour it over the lamb. Cover and refrigerate overnight. The next day, drain the lamb and pat it dry. Transfer it to a roasting pan and coat with olive oil. Rub the lamb with seasoning, garlic powder, paprika, and mustard, ensuring even coverage. Add the chopped chili and pour the white wine over the meat. Roast at 200°C (392°F) for 1 hour, basting occasionally. Lower the temperature to 180°C (356°F) and continue roasting for another hour, basting every 15 minutes. Serve warm with your favorite side dish.

Pork with Citrus Glaze

Ingredients:

  • 800 g pork loin
  • 4 garlic cloves
  • 2 oranges
  • 1 lemon
  • 1 tangerine
  • 1 cup white wine

  • Olive oil

Preparation:
Wash the citrus fruits thoroughly and slice them. In a bowl, combine olive oil, minced garlic, cloves, salt, paprika, and black pepper with white wine.   • 1 tsp paprika
  • 1 tbsp mustard
  • 1 tbsp lemon juice
  • 8 tbsp olive oil

Preparation:
Mix olive oil with all herbs and spices in a bowl to create a marinade. Coat the lamb evenly, reserving some marinade for basting. Allow the lamb to marinate in the refrigerator for at least 2 hours. Almond-Crusted Trout

  • 2 large trout
  • 1 tsp sea salt
  • Black pepper

  • 100 g almonds
