Experience the magic of Albanian cuisine with this luscious Miracle Cake. Soaked in a rich milk mixture and topped with caramel, it’s a moist, indulgent dessert that’s perfect for any celebration or sweet craving.
Ingredients:
- 6 large eggs
- 1 ½ cups granulated sugar
- 2 packets vanilla sugar (or 2 teaspoons vanilla extract)
- 1 tablespoon baking powder
- 3 ⅓ cups all-purpose flour
- 2 cups heavy cream
- 8 ½ cups whole milk
- 1 ¼ cups powdered milk
- ½ cup caramel sauce
Instructions:
- Whip the egg whites with granulated sugar until stiff peaks form, then add the egg yolks one at a time, mixing well. Gradually fold in the baking powder and flour using a spatula.
- Pour the batter into a greased or parchment-lined rectangular baking pan. Bake at 430°F for about 30 minutes, or until golden brown.
- Remove the cake from the pan and allow it to cool completely. Once cooled, place it back in the pan and poke holes all over the surface with a fork.
- In a separate bowl, dissolve powdered milk in 2 cups of milk. Add the remaining milk and heavy cream, mixing thoroughly. Pour this mixture over the cake, allowing it to absorb the liquid.
- Once the cake has soaked up all the liquid, drizzle it with caramel sauce. Chill before serving for the best flavor and texture.
