Mushroom goulash is a celebration of earthy, seasonal flavors. Meaty oyster mushrooms, tender potato cubes, and a medley of vegetables simmer together in a rich, aromatic broth, accented with garlic, herbs, and just a hint of heat. Thick, hearty, and comforting, it strikes the perfect balance between rustic charm and sophisticated flavor — a dish that warms the soul and elevates simple ingredients into something truly memorable.
Ingredients:
- 10 oz oyster mushrooms, sliced
- 10 oz potatoes, diced
- 2 medium onions, finely chopped
- 2 carrots, diced
- 2 bell peppers (fresh or frozen), chopped
- 1 small leek, sliced
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- Crushed red pepper, to taste
- Salt and black pepper, to taste
- Dried herbs or vegetable seasoning
- 2 tablespoons olive oil (or water for a lighter version)
- Fresh parsley, chopped
Preparation:
In a large pan, heat the oil over medium heat. Add the onions, carrots, peppers, and leeks. Sauté gently for about 20 minutes, until softened. Stir in the oyster mushrooms and cook briefly, allowing them to release their aroma. Add the diced potatoes, season with salt, pepper, crushed red pepper, and herbs. Pour in enough water to cover the vegetables and simmer until the potatoes are tender.
Mix the flour with a little water and stir it into the stew to thicken. Add minced garlic and parsley, and cook for a few more minutes until the sauce becomes rich and smooth. Serve warm with bread, rice, or polenta for a hearty, comforting meal.
