This nutty whole grain bread is soft, slightly sweet, and packed with a mix of grains and seeds. Perfect for breakfast toast, sandwiches, or a wholesome snack.
Ingredients:
- 2 cups warm water (110°F)
- 1/3 cup rolled oats
- 1/4 cup sunflower seeds
- 2 Tbsp pumpkin seeds
- 2 Tbsp flaxseed meal
- 1 Tbsp chia seeds
- 1/4 cup olive oil
- 3 Tbsp maple syrup
- 1 1/2 tsp salt
- 1 1/2 Tbsp active dry yeast
- 4 cups whole wheat flour
- 1/2 cup bread flour
Instructions:
- In a large bowl, mix warm water, maple syrup, olive oil, and yeast. Let it sit 10 minutes until bubbly.
- Stir in oats, seeds, salt, and flours until a sticky dough forms. Knead for 8–10 minutes by hand or 5 minutes with a mixer until elastic.
- Cover and let the dough rise in a warm place for 45 minutes, or until doubled.
- Divide dough into two greased loaf pans. Let rise another 30 minutes.
- Bake at 375°F for 30–35 minutes until golden brown and hollow-sounding when tapped. Cool completely on a wire rack before slicing.
Tips:
- Sprinkle extra seeds on top for crunch.
- Replace water with almond milk for a slightly richer flavor.
