This nutty whole grain bread is soft, slightly sweet, and packed with a mix of grains and seeds. Perfect for breakfast toast, sandwiches, or a wholesome snack.

Ingredients:

  • 2 cups warm water (110°F)
  • 1/3 cup rolled oats
  • 1/4 cup sunflower seeds
  • 2 Tbsp pumpkin seeds
  • 2 Tbsp flaxseed meal
  • 1 Tbsp chia seeds
  • 1/4 cup olive oil
  • 3 Tbsp maple syrup
  • 1 1/2 tsp salt
  • 1 1/2 Tbsp active dry yeast
  • 4 cups whole wheat flour
  • 1/2 cup bread flour

Instructions:

  1. In a large bowl, mix warm water, maple syrup, olive oil, and yeast. Let it sit 10 minutes until bubbly.
  2. Stir in oats, seeds, salt, and flours until a sticky dough forms. Knead for 8–10 minutes by hand or 5 minutes with a mixer until elastic.
  3. Cover and let the dough rise in a warm place for 45 minutes, or until doubled.
  4. Divide dough into two greased loaf pans. Let rise another 30 minutes.
  5. Bake at 375°F for 30–35 minutes until golden brown and hollow-sounding when tapped. Cool completely on a wire rack before slicing.

Tips:

  • Sprinkle extra seeds on top for crunch.
  • Replace water with almond milk for a slightly richer flavor.
  • Can be toasted or used for sandwiches.
