Ingredients:
- 1 1/2 cups (300 grams) sugar
- 4 large eggs
- 3/4 cup (100 grams) ground walnuts
- 1 1/2 cups (200 grams) all-purpose flour
- Zest of 1 lemon
- 1/2 packet baking powder
- 10 tablespoons water
- 1 1/2 sticks (150 grams) butter
- 3 tablespoons cornstarch (or flour as a substitute)
- 3/4 cup (150 grams) powdered sugar
- 3 bars of chocolate (about 5 oz each)
- Juice of 1 1/2 oranges
- 2 cups (500 ml) milk
Preparation:
- Cake:
Beat the egg yolks with the sugar until fluffy. Gradually add the 10 tablespoons of water. Slowly incorporate the flour mixed with baking powder, ground walnuts, lemon zest, and whipped egg whites. Mix everything well and pour the batter into a greased and floured cake pan. Bake at a moderate temperature for about 30 minutes. - Filling:
In the meantime, prepare the filling: Beat the butter with the powdered sugar until fluffy. Gradually add the cooked cornstarch mixture, 1 tablespoon at a time. To make the cornstarch mixture, dissolve 3 tablespoons of cornstarch in 2 cups of milk and heat it on the stove, stirring until it thickens. Once it thickens, grate the 3 bars of chocolate into the mixture, add 3 tablespoons of sugar, and let it simmer for 3 minutes. Let the cornstarch mixture cool completely, then mix it with the filling. - Assembling the Cake:
Slice the cooled cake in half horizontally, sprinkle the layers with orange juice, and fill them with the prepared filling. Finally, cover the top of the cake with the filling and sprinkle with grated chocolate. This cake is moist and very generous in flavor.
