Ingredients:
- 1 potato (about 1 cup, diced)
- 1 carrot (about 1/2 cup, diced)
- 1 celery stalk (about 1/2 cup, diced)
- 1 onion (about 1 cup, chopped)
- 1 garlic clove (minced)
- 1 tomato (diced)
- 1 1/2 cups Brussels sprouts (sliced)
- 1 lb beef (optional, can be substituted with beans for a vegetarian version)
- 2 cups vegetable broth
- 1/4 cup pasta (such as elbow or small shells)
- 2 tbsp olive oil
- Salt, pepper, thyme (to taste)
Instructions:
- Begin by chopping the potato, carrot, celery, onion, garlic, and tomato into small pieces.
