This classic minestrone soup is packed with vegetables, pasta, and flavorful broth. A nutritious and satisfying meal perfect for any occasion.

Ingredients:

  • 1 potato (about 1 cup, diced)
  • 1 carrot (about 1/2 cup, diced)
  • 1 celery stalk (about 1/2 cup, diced)
  • 1 onion (about 1 cup, chopped)
  • 1 garlic clove (minced)
  • 1 tomato (diced)
  • 1 1/2 cups Brussels sprouts (sliced)
  • 1 lb beef (optional, can be substituted with beans for a vegetarian version)
  • 2 cups vegetable broth
  • 1/4 cup pasta (such as elbow or small shells)
  • 2 tbsp olive oil
  • Salt, pepper, thyme (to taste)

Instructions:

  1. Begin by chopping the potato, carrot, celery, onion, garlic, and tomato into small pieces.
  2. Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 2-3 minutes.
  3. Add the chopped vegetables and beef (if using) to the pot and sauté for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce to a simmer and cook for 20-30 minutes, until the vegetables are tender.
  5. Add the pasta and cook until tender, about 8-10 minutes.
  6. Season with salt, pepper, and thyme to taste.
